Stop And Smell The Roses

The interaction with plants can improve mood, reduce feelings of depression, and boost overall happiness. There are plenty of stories of how plants have served as a source of comfort and hope, through life, loss, and transition. Here's my personal story...

Following my diagnosis of multiple sclerosis (MS), I could no longer continue along the career path I had chosen. I experienced a loss of sensation, difficulty taking deep breaths, and increasing challenges with mobility. As I faced the gradual changes this new chapter of life would bring, I spent many weeks seeking inspiration, strength, and direction from above. I needed something to help carry me through the physical and emotional pain my body and mind were enduring. As I had done for years, I had already planned and begun my gardening routine that season. By the time of my diagnosis, even as I experienced significant paralysis, my crops were emerging from the soil. In the midst of my own uncertainty, I began to take notice of what was happening around me. Life was emerging from the darkness beneath the soil, reaching toward the light and producing something beautiful!

Plants for food

Plants and flowers are not only beautiful to behold; they also play an essential role in nourishing and sustaining us. From root to seed, there are seven main parts of a plant that we commonly eat, each offering its own flavors, nutrients, and culinary possibilities. 🌱🥕

  • Tubers - potatoes
  • Root - carrot/beet
  • Stems - celery, rhubarb
  • Leaves - lettuce, spinach
  • Flowers - hibiscus, mint
  • Fruit - banana, apple
  • Seeds - popcorn, sunflower seeds

Garden To Plate

Here is one recipes inspired by vegetables grown in my summer garden and has been adapted over the years! Since I don’t grow the same vegetables every season, store-bought produce helps fill in the gaps and brings any recipe to life. 🥕🥔🎃
